It is permitted to squeeze grapes to make wine and grape juice, and it is also permitted to squeeze olives to make oil (Terumot, Chapter 11, Mishnah 3; Rambam, Shemitah, Chapter 5, Halacha 3; Terumot, Chapter 11, Halacha 2); Azmera Leshimcha (Shemitah, Issue 3).
