When is Shabbat observed in New Zealand: on their Saturday or on their Sunday?

On their Sunday.
In accordance with the opinion of Maran the Chazon Ish, throughout the entire area between the line ninety degrees from Jerusalem and the International Date Line, 135 degrees east of Jerusalem, [including: the islands of Japan, part of the Philippine Islands, New Zealand, Guinea, St. Lawrence, and many other islands], Shabbat must be observed according to the local “Sunday” in every respect.
