Turkish Coffee in a Third Vessel

Is there an issue with brewing Turkish coffee on Shabbat in a third vessel? The Chazon Ish only stringently ruled at the end of Siman 52, being concerned about cooking easily cooked items even in a third vessel, but does not consider items not mentioned in the Talmud as easily cooked to be so. Nevertheless, I see that many are stringent with Turkish coffee, and I do not understand why.

If it is evident that an item cooks well in a third vessel, it proves that it is among the easily cooked items, and it is prohibited.
