Ashkenazim do not eat certain parts found in the back section of the animal, because they require nikkur (a specific process of removal). These areas contain chelev (forbidden fats), which are prohibited by the Torah with the severity of karet (spiritual excision).
Special expertise is needed to distinguish between the forbidden fats and the permissible ones.
