Non-Jewish cooking while making shawarma

What is the law regarding a shawarma stand, where a Jew puts a large piece of meat on the spit next to the fire, and because the piece is very thick, only the outer layer of meat is cooked, but and the inner layers are not cooked. Then a gentile cuts some meat off for customers, and by cutting it, he exposes the inner layer of meat, which now gets cooked. Is there a prohibition of food that was cooked by a gentile in this?

According to the Ashkenazi custom, it is enoght for the Jew to light the fire even if the non-Jew places the food on the fire. Therefore, shawarma is certainly permitted.
According to the Sephardic custom, it is necessary for the Jew to place the food on the fire. Therefore, a Jew has to cut the shawarma meat.
