What books should one read prior to converting to Judaism?

One who is properly converting to Judaism with an Orthodox rabbi will be given a list of books that is required reading for the conversion.

Meanwhile, you can begin with:

1. Studying the weekly Torah portion with Rashi  

2. R Yaakov Menken's "The everything Torah Book" 

3. R Berel Wein's "Living Jewish"
