The blessing recited when separating challa is “…l’hafrish challa.” There are also those who recite “…l’hafrish challa min ha’issa. and some say "...l'hafrish challha Terumah" and then After the blessing, one should say regarding the piece he cut off: “This is challah.” These are the accepted customs according to Halacha.
Many people do indeed have the custom to add personal prayers after separating the challa. This is completely acceptable.
