Hi! For work, I need a quote from the liturgy (and its attribution) about how the purpose of education is to transmit Jewish values and customs to the next generation.

Thank you for your question.
I am unsure of a passage that directly and explicitly links that the purpose of education is to transmit Jewish values and customs to the next generation. However, it is implied in virtually every passage in all of Jewish liturgy and literature.
For example, the Code of Jewish Law says that "When a child begins to speak, the father should begin teaching him verses of Torah." It is explained that even if the child does not yet understand what he is staying, starting Jewish education at this young age builds an appreciation and respect for the Torah.
When a boy turns 3 he is to wear tzitzit to start training him in performing mitzvot. In many families, girls begin to light Shabbat and holiday candles at that age, as well.
There is, of course, the Shema prayer which is said multiple times each day. Here it is:
You shall love the L-rd your G‑d with all your heart, with all your soul, and with all your might. And these words which I command you today shall be upon your heart. You shall teach them thoroughly to your children, and you shall speak of them when you sit in your house and when you walk on the road, when you lie down and when you rise. You shall bind them as a sign upon your hand, and they shall be for a reminder between your eyes. And you shall write them upon the doorposts of your house and upon your gates.
Here we see the emphasis on teaching our children Torah so that Judaism will continue.
