In the prayer of lightning hanukha candles, why do we say להדליק נר של חנוקה And not נרות חנכה

The reason for this is because according to the letter of the law, one need only light one candle each night of Chanuka. The fact that we light more candles each night (corresponding to the number of days of Chanuka that have passed) is "extra" and not truly required.

Hence, the mitzva really is to simple light "ner" - one candle.
